Method
1.Heat oil in a large frying pan over moderately high heat. Add mince; cook, stirring with a wooden spoon to break up lumps, 5 minutes or until browned. Stir in spice mix; cook 1 minute, or until fragrant. Remove pan from heat. Cool slightly. Add carrot, onion, coriander, olive and feta to pan. Stir to combine.
2.Heat a large frying pan or grill plate over high heat. For each tostada, spray both sides of a tortilla with oil. Cook 30 seconds each side. Mould the warm tortilla over a large, deep metal bowl. Stand 3 minutes; cool (tortilla will hold a cup shape when cool).
3.Place tortilla cups on serving plates. Place the spinach in cups. Top with beef mixture. Serve at once.
Alternatively, you could place the Moroccan spice mix with ground cumin, ground coriander, ground turmeric and dried rosemary.
