1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 12-hole (1/3-cup) muffin pan or line it with paper patty cases.
2.In a bowl, combine egg, soy milk and oil.
3.In a separate bowl, sift flours, bicarbonate of soda and 1 teaspoon cinnamon. Stir in chopped apple, brown sugar and egg mixture until just combined (do not overmix).
4.Spoon mixture into prepared pan; top with sliced apple. Bake 20 minutes, or until lightly browned and springy to touch.
5.Combine caster sugar and remaining cinnamon in a bowl.
6.Sprinkle hot muffins with cinnamon sugar. Stand in pan 5 minutes, then transfer to a wire rack to cool completely.
