Method
1.Season chicken. Wrap a slice of prosciutto around each fillet. Top with a lemon slice and secure with a toothpick. Dip in flour to coat.
2.Heat oil in a large frying pan on medium. Cook chicken for 4-5 minutes each side, until cooked through. Transfer chicken to a plate. Add wine to pan, increase heat to high and boil for 2 minutes, until reduced by half. Add butter to sauce and stir until melted.
3.Remove toothpicks from chicken, slice and place on salad. Drizzle over sauce and serve.
You can replace the chicken breast fillets with fish fillets, pork fillets or veal steaks for this recipe, if you like.
