1.Preheat oven to 200°C. Lightly grease 4 ramekins. Place on a baking tray.
2.In a medium pan, melt 20 grams of the butter on high. Saute garlic 1 minute. Add spinach and cook covered 2-3 minutes until wilted. Transfer mixture to a sieve. Press firmly to remove excess liquid. Cool slightly.
3.In a large bowl, combine spinach, chicken, feta, egg, herbs and nutmeg. Mix well.
4.Working quickly, layer 3 filo sheets together, brushing each with melted remaining butter. Cut in halves and place each piece in a ramekin with sides overhanging. Repeat with remaining pastry.
5.Place 1/4 of mixture into each pastry case, pressing gently. Bring the sides of the pastry up to encase the mixture and scrunch them together to seal.
6.Brush tops with butter. Bake 20-25 minutes until golden. Serve with salad.
These are so delicious served with yoghurt. Frozen spinach can be used but make sure you remove excess water.
