Method
1.Cook bacon in a frying pan on high heat for 3-5 minutes, until crisp. Drain on paper towel. Cook chicken in pan for 5-6 minutes each side, until browned and cooked through. Remove from heat and rest for 5 minutes. Cut into thin slices.
2.Spread mayonnaise on one side of each slice of toast. Season with pepper. Top four slices of toast with lettuce, bacon, a few slices of tomato and half of onion. Top with another slice of toast, mayonnaise side down, remaining lettuce, onion, tomato and chicken. Top with a slice of toast. Cut sandwiches in half, top each with an olive and secure with a toothpick to serve.
