Blue cheese, pear and macadamia salad

1.Toast macadamias by tossing in a dry pan over a medium heat 2-3 minutes until golden. Nuts also may be toasted in the oven at 180°C for 5 minutes. Cool, then chop roughly
2.In a large serving bowl, combine pears, lettuce leaves, cheese and macadamias.
3.Just before serving, drizzle dressing over salad and toss to combine.

Dressing

4.Whisk vinegar, oil and honey in a small jug.

If you don’t like blue cheese, try using sliced brie or camembert. Olive oil can be used in place of macadamia oil.
