1.Cook potato in a large saucepan of boiling water for 10-12 minutes or until tender, adding beans in last 3 minutes. Drain. Transfer potato and beans to a large heatproof bowl. Add butter; toss until combined. Season with salt.
2.Meanwhile, heat oil in a small saucepan over moderate heat. Add onion and sun-dried tomato; cook and stir for 3 minutes or until softened. Add mustard and cream. Stir until well combined and mixture comes to the boil. Reduce heat; simmer. uncovered, for 3 minutes or until thickened.
3.Season beef with salt and pepper. Spray with oil. Heat a large frying pan over moderate heat. Cook beef, 2 steaks at a time, for 3-4 minutes each side for medium-rare or until cooked to your liking. Transfer beef to a heatproof plate. Cover with foil; rest for 5 minutes. Place beef on serving plates. Spoon sauce over beef. Serve with potato and beans.
You can cook beef on the barbecue; cooking time may vary. You can use dijon mustard instead of wholegrain mustard.
