Ingredients

Method

1.Preheat oven to moderate, 180°C.
2.In a large bowl or plastic bag, toss beef with flour, shaking off excess.
3.Heat 2 tablespoons oil in a large saucepan on high. Brown meat, in 2 batches, 3-4 minutes each batch. Transfer to a plate.
4.Heat remaining oil in same pan on high. Saute onion and garlic 2-3 minutes, until tender.
5.Return beef to pan with tomato, capsicums, stock, wine and sugar. Bring to boil. Transfer mixture immediately to a large casserole dish.
6.Bake, covered, 1 1/2 hours. Stir in artichokes; bake a further 15 minutes, or until meat is tender.
7.Blend olives and chopped oregano through; sprinkle with oregano leaves.
8.Serve with cooked spiral pasta and salad.

Seasoned flour is plain flour with added seasoning’s to taste. Cook pasta in a large pan of boiling salted water 10-12 minutes, until tender. Drain well. Toss with a little butter, if desired.
