Method
1.Cook fettuccine in a pan of boiling salted water according to packet instructions; drain.
2.Meanwhile, heat oil in a large frying pan on high; cook beef, in batches, 2 minutes each batch, until browned. Remove from pan.
3.Cook sliced onion in same pan on medium heat 5 minutes, until soft. Add mushroom; cook 2 minutes, until lightly browned.
4.Stir in beef, sour cream, stock, tomato paste and grated onion. Reduce heat to medium-low; simmer 2-3 minutes, until heated through.
5.Divide pasta between plates; top with beef stroganoff. Scatter over chives and serve.
