Method

1.In a medium heatproof bowl, stir together onion and vinegar. Stand 15 minutes at room temperature or until onion softens and vinegar colour changes to pink. Add mustard, honey and half the oil; mix until well combined and honey dissolves. Set aside.
2.Preheat a char-grill pan to moderately high heat. Brush remaining oil over both sides of beef. Season. Grill for 2-3 minutes each side or until cooked to taste. Transfer beef to bowl with onion mixture; turn to coat, then rest 5 minutes. Transfer beef to a board; slice into thick pieces.
3.Combine salad leaves, parsley, cucumber, radish and a little of the onion mixture in a large bowl. Divide salad among serving plates; top with sliced beef. Serve topped with remaining onion mixture.
