Method

1.To make pesto: process basil, garlic, parmesan and pine nuts in a food processor, until finely chopped. With motor running, gradually add combined oil and juice, until pesto is almost smooth.
2.Preheat oven to 200°C (180°C fan-forced). Grease and line a 30 x 20cm (base measurement) slice pan with baking paper, extending paper at 2 long sides for handles.
3.Place flour and sugar in a bowl. Using fingertips, rub in butter, to make coarse crumbs. Add milk; mix to a soft, sticky dough. Knead dough lightly on a floured surface, until just smooth. Roll out to a 40 x 30cm rectangle.
4.Spread pesto evenly over dough. Sprinkle with bacon, feta and parmesan. Roll up tightly from 1 long side to form a log; trim edges. Using a serrated knife, cut roll into 12 equal slices. Place slices, cut-side up and side by side, in prepared pan.
5.Bake 25 minutes or until golden and cooked. Stand for 5 minutes. Serve scrolls warm.

The basil pesto recipe will produce 3/4 of a cup. You will only need 1/4 cup of the pesto for this recipe. You could use 1 cup grated pizza cheese instead of feta and parmesan.
