Method

1.For the beef mixture, combine all of the ingredients except the tortillas together in a bowl. Set aside for 15 minutes while you make the guacamole and warm the tortillas.
2.To make guacamole blend all the ingredients to a smooth consistency, adding water if needed. Taste for seasoning and add extra salt and lime juice as required.
3.Heat a pan to low-medium temperature and dry fry (without using oil) each tortilla until it begins to blister, usually around 1-2 minutes. Turn over and repeat for the other side.
4.Keep the cooked tortillas warm in a stack under a folded tea towel whilst you cook the rest. Once all the tortillas are cooked, increase the heat to medium-high and stir-fry the beef mixture until just cooked – about 5-7 minutes.
5.Serve warm, topped with the beef, onions, capsicum, a dollop of guacamole and a squeeze of lime juice. Eat with your hands!
