Roast vegetable pasta gratin

Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Bring a large saucepan of water to the boil. Add pasta. Boil 10 minutes, until al dente. Drain well. Set aside.
3.In a large baking dish, toss vegetables in oil. Season. Bake 25-30 minutes. until golden.
4.Meanwhile. melt butter in a saucepan on low. Saute garlic 1-2 minutes. Add flour. Cook, stirring, 1 minute. Remove from heat. Gradually stir in milk until smooth. Return to heat and cook, stirring, until mixture boils. Simmer 3 minutes. Season.
5.In a large baking dish, combine cooked pasta. vegetables and sauce, mixing well.
6.To make topping: In a small bowl, combine cheese, breadcrumbs. parsley and butter. Sprinkle over pasta mixture. Bake 15-20 minutes, until crisp and golden.
