1.Heat oil in a large saucepan or casserole pan on high. Cook chicken in batches, for 2-3 minutes until brown all over. Remove from pan.
2.Cook onion in same pan on medium heat for 5 minutes, until softened. Add garlic and cook for l minute, until fragrant. Stir in stock, beans, tomatoes, tomato paste and herbs. Bring to boil. Return chicken to pan with potatoes. Reduce heat to medium-low and simmer for 30 minutes, until chicken is cooked through and potato is tender. Serve with salad.
