1.In a small saucepan, combine sugar and water. Stir over a medium heat until sugar dissolves. Simmer for 6-8 minutes, without stirring, until mixture is syrupy. Remove saucepan from heat. Cool completely.
2.Using a fine sieve, strain watermelon into a large bowl. Stir in syrup and juice. Fold in egg whites. Pour into an ice-cream churn. Churn following manufacturer’s instructions, about 20 minutes (see Notes).
3.Pour mixture into a 10 x 20cm loaf pan. Cover with plastic wrap. Freeze for 3 hours until firm.
4.VODKA FRUIT SALSA: In a jug, stir vodka, sugar and juice together until sugar dissolves. Place fruit in a bowl and pour over vodka mixture.
5.Divide fruit among glasses and spoon over juices. Top with a scoop of sorbet to serve.
If you don’t have an ice-cream churn, pour the mixture into a tray and partially freeze. Return it to a bowl and beat well with an electric mixer to remove ice crystals. Return to tray and freeze.
