Ingredients

Method

1.Preheat oven to slow, 150°C. Lightly grease and line base and sides of two 18cm round cake pans.
2.In a large saucepan, stir together caster sugar, water, butter, milk chocolate, instant coffee granules and vanilla extract on low until smooth. Transfer to a large bowl. Cool for 30 minutes.
3.Lightly whisk in eggs. Stir in sifted combined self-raising flour, plain flour and cocoa. Divide mixture evenly between pans. Bake for 1 ¼-1 ½ hours until cooked when tested.
4.Cool in pan for 10 minutes. Transfer to a wire rack to cool completely.

White chocolate ganache

5.Place white chocolate melts in a heat-proof bowl. In a saucepan, bring cream to a simmer on medium. Pour over chocolate. Stir until smooth. Set aside for 1 hour until thickened slightly.
6.Whisk for 30 seconds until light in colour. Level cakes, then split each in half horizontally. Fill with ganache and decorate top with broken squares of Cadbury Dairy Milk Top Deck.
