Method

Sweet treat madeleines

1.Make madeleines Preheat oven to 180°C (160°C fan-forced).
2.Melt butter in saucepan over medium heat. Brush moulds evenly using pastry brush, then dust lightly with flour. Shake off excess flour and set aside.
3.Cook rest of butter for about 5 minutes, until butter turns golden brown and gives off a nutty aroma (be careful not to burn it). Remove from heat and transfer to ceramic bowl to prevent butter cooking further. Set aside to cool.
4.Sift icing sugar and flour into medium bowl. Stir in almonds.
5.Whisk egg whites until frothy in other clean bowl using squeaky clean whisk. Add almond mixture and whisk to combine. Whisk in brown butter and honey.
6.Spoon batter into prepared moulds, filling almost to the top. Place in oven and cook for 12 to 15 minutes or until madeleines are light golden and springy to touch.
7.Allow to cool and remove from mould by tapping on hard surface. Cool on wire rack.

Strawberries in syrup

8.Trim strawberries, cut in half and set aside.
9.Place caster sugar in small saucepan with water. Heat to dissolve sugar, add strawberries and cook for 2 to 3 minutes or until soft.
10.Dust madeleine’s with icing sugar and serve with strawberries and soft whipped cream for a sweet delight!

EQUIPMENT: Pastry brush; Madeleine Tin (from about $ 15 at specialist Kitchenware stores) or mini muffin tins; Small saucepan; 2 ceramic bowls; sieve; Medium bowl; whisk; spoon; wire rack You can make the batter and refrigerate it overnight. This helps give the characteristic bump on the madeleines.
