Method

1.Spoon yoghurt into a serving bowl. Sprinkle thickly with dark brown sugar, then demerara sugar, spreading evenly to completely cover yoghurt. Cover with plastic wrap and chill for 4 hours. Sugars should seep into yogurt and form a crust.
2.Wash blueberries and slice strawberries. Gently toss berries with honey dew melon and mango cubes.
3.Spoon fruit salad into serving bowls, top with fresh mint leaves and serve with sugared yogurt.

The success of this recipe depends on the freshness of the fruit and quality of yoghurt. For a fabulous creamy, smooth result, strain yoghurt through a fine sieve over a bowl for several hours or overnight. You can use pawpaw instead of mango and champagne melon in place of honey dew.
