1.Place 2 cups water, cinnamon stick and juice in a large microwave-safe bowl. Stand pears upright in bowl. Microwave on Medium (50%) for 15-18 minutes or until tender. Remove pears from bowl; cool for 10 minutes. Cut pears in half lengthwise remove cores.
2.Meanwhile, preheat oven to 160°C/140°C fan forced. Lightly grease and line base and sides of a 21x1Ocm (base measurement) loaf pan with baking paper.
3.Using an electric mixer, beat butter and sugar in a small bowl until pale and creamy. Add egg and essence; beat until combined. Add sifted flour; fold to combine. Pour mixture into prepared pan; smooth surface. Press pears, standing upright. into mixture. Bake for 50-55 minutes or until a skewer inserted at centre comes out clean.
4.Meanwhile, to make toffee sauce, combine all ingredients in a medium saucepan over moderate heat. Bring to the boil. Reduce heat; simmer for 10 minutes or until sauce thickens.
5.Pour a little sauce over warm pudding. Serve with extra toffee sauce and cream
You can cook pears up to 2 days ahead Sauce can be made up to 3 days ahead; cover and keep in fridge.
