Rich chocolate ice-cream

Really good chocolate ice-cream is one of life's little pleasures. Make your own at home with this easy-to-follow recipe. Top scoops of it with crushed choc-honeycomb, or your favourite chocolate bar, for a delicious twist.

Method

1.In a medium saucepan, bring milk almost to boiling point on medium heat. Remove from heat and add chocolate. Set aside to melt for 5 minutes, then whisk until smooth.
2.Meanwhile, in a large bowl, whisk egg yolks with sugar until very thick and pale.
3.Gradually pour chocolate milk into yolk mixture, whisking constantly to combine.
4.Return mixture to a clean saucepan. Cook on medium heat for 4-5 minutes, stirring occasionally, until mixture thickens and coats back of a wooden spoon. Do not boil. Cool to room temperature.
5.In a bowl, beat cream until firm peaks form. Fold through cooled custard mixture.
6.Pour into the bowl of an ice-cream machine and churn according to manufacturer’s instructions (about 30 minutes). Pour into a chilled 5-cup freezer container. Freeze for 2 hours, until completely firm. Serve in scoops topped with crushed chocolate honeycomb.

For best results, use good-quality eating chocolate. If preferred, use milk or white chocolate.
