1.Preheat oven to 180°C. Lightly grease 6 x 1-cup individual ovenproof dishes.
2.In a large saucepan, combine rhubarb, apple, pears, sugar and water. Bring to boil. Reduce heat and simmer, stirring occasionally, for 8-10 minutes until tender. Spoon mixture into prepared dishes.
3.To make crumble, sift flour and cinnamon together into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in oats, macadamias, coconut and sugar.
4.Sprinkle over fruit mixture in each dish. Bake for 15-20 minutes until golden. Serve warm with ice-cream.
Try other combinations of fruit such as cherries, apples and pears, canned mixed fruit and rhubarb or mixed berries.
