Ingredients

Method

1.Place raspberries and sugar in a saucepan over high heat. Cook, covered, for 5 minutes. Press raspberries through a sieve into a bowl.
2.Whisk custard and cream in a saucepan. Cook and stir over low heat for 5 minutes or until heated.
3.Using an electric mixer, beat egg whites and cream of tartar in a bowl until soft peaks form. Gradually beat in extra sugar; beat until the sugar dissolves.
4.Bring a large saucepan of water to a simmer over moderately low heat. Drop heaped teaspoon measures of meringue into water. Poach, in batches, turning halfway through, for 5 minutes or until firm.
5.Pour warm custard into serving bowls. Swirl in raspberry syrup. Top with meringue, extra berries and pistachios.
