Method

1.Preheat oven to 150°C. Line 2 oven trays with baking paper. In a large bowl, sift icing sugar and almond meal together.
2.In a medium bowl, beat egg whites until soft peaks form. Gradually add caster sugar, beating between each addition, until sugar dissolves.
3.Using a large metal spoon, carefully fold in icing sugar mixture and food colouring.
4.Transfer mixture into a large piping bag fitted with a 2cm plain nozzle. Holding tip 2cm above baking tray, pipe straight down to create 4cm rounds, 2.5cm apart. Lightly tap trays once on bench. Set aside 30 minutes in a cool dry place to allow a skin to develop (this prevents cracking and allows them to maintain their shape during cooking).
5.Bake macarons for 15-20 minutes. Cool on trays.
6.Meanwhile, make the ganache. In a saucepan, bring cream to boiling point. Remove from heat. Add chocolate and stir until smooth. Chill ganache until a spreadable consistency.
7.Sandwich macarons with ganache and raspberries.
