Ingredients

1 basic vanilla custard, chilled

1/2 cup (125ml) peach tea cordial, chilled

1/2 cup (125ml) thickened cream, chilled

red food colouring

1/2 cup (125g) chopped glace peaches

mint leaves, to serve

Method

1.Combine custard, cordial, cream and enough food colouring to give a pale peach colour.

2.Transfer custard mixture to bowl of ice-cream machine and churn according to manufacturer’s directions.

3.Stir in glace peaches. Pour into a container and freeze overnight, until firm.

4.Serve ice-cream scattered with mint leaves, if you like.
