Passionfruit slice

1.Preheat oven to moderate, 180°C. Lightly grease and line an 18cm x 28cm slice pan with baking paper.
2.In a bowl, using an electric mixer, beat butter, icing sugar and vanilla together until light and creamy. Fold in combined sifted flours to form a soft dough. Press dough evenly into pan. Prick base all over with a fork. Bake 15 minutes, until golden.
3.Make Topping; (see recipe below).
4.Cut slice into squares. Store in an airtight container in fridge. To serve, whip remaining cream. Top each slice with a dollop of cream and a teaspoon of extra passionfruit pulp.

Topping

5.Combine marshmallows, pulp and milk in a heat-proof bowl over a saucepan of simmering water. Stir constantly until melted.
6.Stir in lemon juice. Transfer to a large bowl. Chill 45-50 minutes, stirring every 15 minutes, until slightly thickened.
7.Whip half cream and fold into marshmallow mixture. Pour over base. Chill overnight until set.

For a clean cut, use a hot sharp knife, wiping the blade with a damp cloth between each cut.
