Method

1.Preheat oven to moderate, 180°C. Lightly grease and line 2 X 20cm round cake pans with baking paper.
2.In a large bowl, sift flour, cocoa, soda and baking powder. Stir in combined sugar, water, sour cream, eggs, butter and vanilla.
3.Using an electric mixer, gradually beat all ingredients together on low, until combined. Increase speed to high and beat 3 minutes.
4.Divide batter evenly between pans. Bake 30-35 minutes, until cooked when tested. Cool in pans 10 minutes. Turn onto a wire rack to cool completely.
5.To make mocha icing, In a bowl, combine all ingredients, stirring until smooth.
6.Sandwich cakes together with half cream. Spread icing over top and side of cake. Serve with remaining cream.
