Mint and mango lassi

A mango lassi is refreshing on a hot summer’s day, and this light version – made from skimmed milk and yoghurt – is guilt-free! Some freshly chopped mint gives this Indian classic a twist.

Method

1.Roughly chop the mango and place in a measuring jug with the remaining ingredients.
2.Using a hand blender, blend on speed 4 for approximately 35 seconds, until smooth.
3.Pour into glasses and decorate with mango slices and mint leaves.
