Method

1.Preheat oven to very hot, 220°C. Line 2 oven trays with baking paper.
2.Place 1 pastry sheet on each tray. Top with another piece of baking paper, then place another oven tray on top (it stops pastry from rising too much).
3.Bake 15-20 minutes, until pastry is golden. Transfer to a wire rack to cool completely.
4.Using a large serrated knife, cut each pastry sheet in half, then into 6 rectangles, crossways.
5.Meanwhile, to make icing, in a small bowl, combine icing sugar, butter and enough water to make a smooth paste.
6.Spread icing over 6 pastry pieces. Fill a small snap-lock bag with chocolate; snip one end. Pipe lines at 1cm intervals across icing, then draw a skewer at 1cm intervals lengthways to form feathers. Allow to set.
7.In a bowl, beat cream until soft peaks form. Fold custard through.
8.Spread remaining pastry rectangles with jam, then with thin layers of cream mixture.
9.Stack 3 pastry pieces together. Top with an iced layer. Repeat. Store in the fridge.

If the pastry has puffed up too much, use a tea towel to press down gently with a baking tray while still hot.
