Ingredients

Method

1.Preheat oven to 180°C. Lightly grease a lamington pan (18cm x 28cm).
2.Cream butter and half of caster sugar in a bowl using an electric beater until light and fluffy. Beat in egg yolks.
3.Gently fold flour into creamed mixture. Chill for 10 minutes. Press into base of prepared pan using floured fingertips.
4.Beat egg whites in a clean, dry bowl until firm peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, until glossy. Fold in coconut with a fork.
5.Spread egg white mixture over base mixture. Bake for 20-25 minutes, until lightly golden and a skewer inserted into centre comes out clean. Cool, then cut into squares. Serve.
