Method
1.Using flat edge of a knife, squash lemongrass stalks to bruise slightly. Tie each stalk in a loose knot and place in a medium saucepan. Add sugar, star anise, cinnamon stick and water. Stir on low heat for 3-4 minutes, until sugar dissolves. Increase heat and simmer for 10-15 minutes until liquid becomes syrupy. Set aside to cool.
2.Add lychees and papaya slices to syrup and serve.
This is particularly delicious chilled overnight, as the flavours intensify.
