1.Combine water and gelatine in a small jug and stir until dissolved.
2.Using an electric mixer, beat egg whites until soft peaks form. Gradually add sugar, beating on high speed until thick and glossy.
3.Combine yogurt with lime rind and lime juice in a bowl. Whisk in gelatine mixture. Fold in egg white mixture until combined. Spoon into individual serving glasses or bowls. Cover and chill for 2 hours, until set. Serve mousse topped with extra grated lime rind and wedges.
