Method
1.Place strawberries in a glass bowl. Add icing sugar and vinegar; mix well. Cover with plastic food wrap; chill for 15 minutes to macerate.
2.Combine mascarpone, zest, juice, 2 tablespoons of the cream and the caster sugar in a bowl.
3.Using an electric mixer, beat remaining cream in a large bowl until soft peaks form. Gradually fold mascarpone mixture into cream until just combined. Spoon into 4 x 1 3/4-cup serving glasses.
4.Top mousse with strawberries. Serve garnished with mint.
You can use cream cheese instead of mascarpone.
