Method
1.Line base and sides of a 21x10cm (base measurement) loaf pan with 2 layers of baking paper, extending paper at long sides for handles.
2.Scoop vanilla ice-cream into a medium bowl. Soften for 1 minute. Add chocolate and cherries; stir until well combined. Spread mixture in base of prepared pan; level top. Freeze for 15 minutes or until firm.
3.Scoop strawberry ice-cream into a medium bowl. Add berries; stir until well combined. Spread mixture over vanilla layer in pan; level top. Freeze for 15 minutes or until firm.
4.Scoop chocolate ice-cream into a medium bowl. Add fruit cake; stir until well combined. Spread mixture over strawberry layer in pan; level top. Cover top with a double layer of plastic food wrap. Freeze for 6 hours or until firm. Drizzle log with melted dark chocolate before serving. Serve sliced with extra strawberry.
