Method
1.Make caramelised fruit by melting butter in a frying pan on medium heat. Stir in sugar, juice and cinnamon. Bring to boil, stirring. Reduce heat and simmer for 2-3 minutes, until thickened slightly. Add fruit and saute‚ for 2-3 minutes, until tender and caramelised.
2.Cut cake into quarters. Heat a frying pan on medium. Spray with oil. Add cake and cook for 30 seconds. Drizzle with Amaretto, if desired. Top with caramelised Fruit and serve with marscarpone and almonds.
