1.Line 2 large baking trays with baking paper. Roll scoops of ice-cream into balls. Place balls on one of the prepared trays. Freeze for 30 minutes or until firm.
2.Place chocolate in a small heatproof bowl over a saucepan of simmering water (don’t let base of bowl touch water). Cook and stir for 3 minutes or until melted and smooth.
3.Combine coconut and cereal in a large bowl.
4.Working quickly, remove ice-cream balls from freezer one by one. Using 2 forks, carefully dip each ball into melted chocolate, turning to coat. Immediately roll in coconut mixture to coat well.
5.Transfer to other prepared tray. Repeat with remaining ice-cream balls, melted chocolate and coconut mixture. Freeze for 30 minutes or until firm. Serve.
To make scooping and rolling ice-cream into balls easier, dip ice-cream scoop into hot water. You can melt chocolate in the microwave. Place chocolate in small microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth. Swap out with any flavour ice-cream you wish.
