Ingredients

Method

1.Preheat oven to hot, 200°C. Line two oven trays with baking paper.
2.Arrange apples on one tray. Sprinkle with brown sugar; drizzle with lemon juice. Bake 15-20 minutes, until golden and tender.
3.Meanwhile, using a 6cm round cutter, cut 4 circles from each tortilla. Place on tray. Brush with butter; sprinkle with caster sugar. Bake 4-5 minutes, until crisp and golden. Transfer to a wire rack to cool.
4.Layer 3 wafers with custard and apple, finishing with a wafer. Repeat with remaining ingredients.
5.Dust with icing sugar to serve.
