Method

1.In a heavy-based saucepan, combine sugar and 2 tablespoons water on medium heat. Stir 2 minutes, until sugar dissolves. Increase heat and simmer for 1-2 minutes until golden.
2.Remove from heat and slowly pour in coconut milk, taking care as it will spit. Return pan to heat, stir until smooth. Reduce heat to low and simmer 5 minutes, until sauce thickens.
3.Divide cubes of mango between serving bowls, top with a scoop of ice-cream. Drizzle with warm sauce to serve.
