Method

1.Preheat oven to 180°C (160°C fan-forced). Line a 12-hole, 1/3-cup muffin pan with paper cases.
2.Combine 80 grams chocolate and 2/3 cup water in a small saucepan on low heat. Cook, stirring, for 2-3 minutes, until mixture is smooth. Remove from heat and set aside to cool.
3.Using an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift combined flours and cocoa over butter mixture and stir until combined.
4.Stir in melted chocolate. Fill paper cases and smooth tops. Bake for 20-25 mins, until a skewer inserted comes out clean. Stand in pan for 5 mins, then transfer cupcakes to a wire rack to cool completely.
5.Heat remaining chocolate and cream in a small saucepan over low heat, stirring until melted and glossy. Spread ganache over cooled cupcakes. Decorate with chopped maltesers. Serve.
