Method
1.Preheat oven to 180°C. Line two baking trays with baking paper. Using an electric mixer, cream butter, cheddar and parmesan together.
2.Stir in flour, paprika, walnuts and 1 teaspoon salt. Mix well until dough forms a ball. Divide in half, pat each into a thick round and wrap in plastic wrap. Chill for 1 hour.
3.Roll out dough thinly. Cut out shapes using a 5cm star cutter. Re-roll trimmings to make more stars. Place biscuits onto prepared trays.
4.Bake in batches for 12-15 minutes, until golden. Cool completely. Store in airtight containers or seal in cellophane bags to give as gifts.
To make the dough with a food processor, use the metal. double-bladed knife attachment to process all ingredients for 20 seconds, until a ball forms. Lightly knead the mixture together to form a smooth dough.
