Method
1.Preheat oven to 200°C.
2.Place each pear half on a sheet of baking paper. Drizzle evenly with combined honey and butter. Gather ends of paper together to form a parcel, twisting to secure. Place on an oven tray and bake 15 minutes.
3.Add walnuts to oven tray. Bake pears and nuts a further 2-3 minutes, until nuts are toasted and pears are tender. In a small bowl, combine walnuts and biscuits.
4.To make cheesecake cream, in a medium bowl, using an electric mixer, beat all ingredients together until smooth.
5.Unwrap parcels. Transfer pears to a serving plate. Top each with a dollop of cream mixture.
6.Sprinkle walnuts and crushed biscuits over pears to serve.
We used Beurre Bosc pears in this recipe.
