1.Preheat oven to 200°C. Grease a 6-hole (¾-cup/180ml) texas muffin pan
2.Sift flour, soda, spices and brown sugar into a large bowl. Stir in pie apples, then egg, milk and butter; mix until just combined. Spoon mixture into pan holes.
3.Peel, core and halve apple; slice each half thinly. Place an apple slice on top of each muffin; brush with extra butter, sprinkle with cinnamon sugar.
4.Bake muffins about 25 minutes. Leave muffins in pan for 5 minutes before turning, top-side up, onto a wire rack to cool. Serve warm or cooled.
Cinnamon sugar is available in the spice section of most supermarkets. These muffins can be stored in an airtight container for up to 2 days.
