Method

1.Preheat oven to 200°C or 180°C fan-forced. Lightly grease a 14 x 21cm loaf pan. Line base and two long sides with baking paper.
2.Combine all ingredients except tomato in a bowl and season to taste. Spoon into prepared pan and top with tomato slices. Bake 40 minutes, until a skewer inserted comes out clean. Stand in pan 5 minutes and turn out onto a wire rack to cool slightly. Serve warm or cooled with smoked salmon or ham.
