1.Preheat oven to moderate, 180°C.
2.Arrange potato and kumara in a baking dish with whole capsicum; drizzle with oil. Bake 25-30 minutes, or until vegetables are tender and capsicum is blistered and blackened.
3.Transfer capsicum to a plastic bag. Set aside 5 minutes, then peel off skin. Remove seeds; cut into strips.
4.Melt butter in a frying pan on high; saute garlic 1 minute. Add potato, kumara and capsicum, tossing well. Preheat grill to high.
5.In a large jug, whisk eggs and onion together; season to taste. Pour over vegetables; cook over a low heat 5-10 minutes, until base is firm.
6.Sprinkle top with parmesan. Finish under grill 3-5 minutes.
7.Serve quiche in wedges with salad.
