1.Preheat grill to hot. Place borlotti beans, chives, parsley and lemon juice in bowl of a small food processor.
2.With the motor running, drizzle oil down spout of food processor until beans have come together but are still a little chunky. Season with sea salt and pepper.
3.Divide bean mix evenly onto slices of brioche toast; top with tomato and mozzarella.
4.Place under a hot grill; cook 2-3 minutes, or until mozzarella is melting.
5.Remove from oven; top with rocket, bresaola, sea salt and cracked black pepper.
Bresaola is an italian air-dried beef. If you can’t find it, prosciutto makes a good substitute.
