Method
1.Whisk eggs and cream in a large jug. Season with salt and pepper.
2.Melt butter in a large frying pan over low heat. Cook egg mixture, without stirring, 1 minute. Cook and stir for 2-3 minutes more, or until mixture is softly scrambled.
3.Stir in spinach and tomato. Remove from heat. Stir in two-thirds of the chives and feta.
4.Place toast on plates; top with scrambled eggs and remaining chives and feta.
Scrambling your eggs over low heat will keep them soft and creamy.
