Method
1.Heat butter and oil together in a 20cm frying pan on medium. Cook potato for 8-10 minutes, until golden and tender. Drain on paper towel.
2.Whisk eggs in a jug. Season to taste. Pour into pan. Cook on medium for 4-5 minutes until omelette begins to set. Sprinkle with potato and remaining ingredients.
3.Cover and cook for a further 5 minutes on low until cheese has melted and omelette is set.
Cold sausages, left-over vegetables or antipasto vegies could be used in this omelette.
