1.Combine flour and sugar in a bowl and make a well in centre. Whisk together buttermilk, passionfruit and eggs in a separate bowl. Pour into well and whisk until smooth.
2.Heat a lightly greased non-stick frying pan on medium. Add 1 1/2 tbsp of batter for each pikelet, allowing room for spreading. Cook for 2 minutes, or until bubbles appear and begin to pop . Turn and cook for 1 minute, or until golden. Repeat with remaining batter. Serve with passionfruit butter.
For the best results, use a balloon-shaped whisk to mix the ingredients into a smooth batter. Watch for the bubbles that come up during cooking – they’ll burst when it’s time to turn over.
