Method
1.Microwave, steam or boil potatoes until tender. Drain, if necessary, and slice off tops. With a small spoon, gently scoop out inside of potato, leaving a thick shell. Set aside scooped-out potato for another use. Keep potato shells warm.
2.Heat beans in a small saucepan on medium for 3 minutes, until hot. Break eggs into individual ramekins. Cook in microwave, covered with kitchen paper, for 1 minute on medium (600 watts/50%), checking twice through cooking, just until set.
3.Spoon baked beans into warm potatoes. Top each potato with a poached egg and serve.
