1.Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper.
2.Combine sage, zest, paprika, garlic and oil in a large, shallow glass dish. Place feta in dish; turn to coat. Cover with plastic food wrap. Chill, turning occasionally, 1 hour.
3.Meanwhile, place tomato on prepared tray. Spray tomato with oil; season with salt, pepper and sugar. Roast 30 minutes, or until tender. Let cool to room temperature.
4.To serve, remove feta from fridge 80 minutes before serving, to bring to room temperature. Place onto a platter with tomato. Sprinkle with pistachio and serve with bread.
Using sweet and smoked paprika gives extra flavour to feta, but use just sweet if you like.
