Method
1.Whisk oil, zest, juice and basil in a medium bowl. Add bocconcini; stir to combine. Cover with plastic food wrap. Chill 2 hours to marinate, stirring occasionally.
2.Preheat oven to hot, 200°C (180°C fan-forced).
3.Place pita bread on a large baking tray. Process semi-dried tomatoes and garlic in a small food processor until smooth. Spread mixture evenly over each pita. Top with sliced tomato; season.
4.Drain bocconcini, reserving marinade; slice. Divide bocconcini among pitas; drizzle with a little reserved marinade.
5.Bake 10-15 minutes, or until golden brown and crisp. Serve topped with rocket. Drizzle with a little more reserved marinade.
For best results, cook pizzas just before serving.
